I work as a sushi chef in a very busy restaurant. After playing around with the makisu for several minutes, I noticed that the product was very light and flimsy. Very much like a sheet of paper. It lacked the sturdiness that a traditional makisu has which helps evenly mold sushi rolls. I was fascinated by the idea of a makisu that was very hygenic but it sacrificed speed as well as performance. Overall I was not impressed.

This gadget is wonderful! I have a traditional bamboo mat (always nice to have an extra mat if I need a helper to roll a lot of sushi) but this silicone mat is a dream and very hygienic, easy to clean up and dry if some ingredients spill out whilst rolling sushi. When I used to roll sushi with my bamboo mat and needed to clean it 'mid-sushi' rolling I could never get the bamboo dry enough and it would inevitably make my Nori (seaweed) soggy. Also, this silicone product makes rolling sushi very smooth (like buttah) and shaping is easy too!

I bought one figuring it would be better than the traditional bamboo unfortunately it is rather floppy. As a result one can not get even pressure on the roll to shape it. I found that it was worse in making rolls than the low cost bamboo despite the benefits of being easier to clean it is not worth it.

By Larry Orman Obviously nontraditional, the non-stick quality of silicone was too tempting not to give it a try. Experimenting, I found I prefer a bamboo mat (makisu) for its uniform pressure in rolling maki sushi, however, I like the flexibility of the silicon mat for inside-out sushi (uramaki). Feeling along the seam, I get a near-restaurant appearance to my California Rolls using a silicone mat. With practice, I eventually found it easier and quicker in making inside-out rolls.

By Donna Martin My husband uses this sushi mat to create vegetarian sushi rolls. He loves it! Before getting this mat, his sushi rolls looked like burritos. He says this mat helps to make the rolls really tight which makes them easier to cut. It also washes up like a breeze.
