We make home made pizza every Friday and over time I've tweaked the original dough recipe to make it a little healthier. That involves substituting EVOO with water. The pizza turns out just great, however it has a tendency to stick to my pizza pan. Parchment paper does the trick and it works perfect. What I like about parchment paper is that I can take the pizza out of the oven, cut it on the pizza pan and slide it directly on the plate. It's like having a pizza peel. I trash the parchment paper and the pizza pan goes in the dish washer. No mess, no spills, no cleaning. I gave this pizza mat a try especially because I wanted to invest in something that would save me $ in parchment paper in the long run. The pizza baked well, not better nor particularly worse than on parchment paper (I'll get to that in a second). However the silicone material does not allow for and easy sliding of the pizza to the plate. I might end up figuring a way to make it work, but for now that is the main reason I'm rating this a 3 star. I also noticed that since the holes on the pizza mat do not overlap the holes on my pizza pan, you end up having areas of the pan with less air flow and that results in a slightly uneven texture of the pizza.
